Shima ninjin Kimpira
It is a dish with Shima ninjin (island carrot) , native to Okinawa, is cut into strips and cooked with say sauce, Mirin, sugar and white sesame. Shima ninjin is high in vitamin A and it is used as medicine food. This dish is a very popular home cooking dish. Burdock is a popular vegetable to cook with, however, normal ninjin (not island carrot) is also cooked with Shima ninjin because you can enjoy the different texture of different carrots.
