Iwashi no Suri-mi Jiru

Iwashi no Suri-mi Jiru is a traditional soup that has been served in and around Hirosaki City, Aomori Prefecture. Fish balls locally known as “Damako” or “Tsumire”, which are a mix of ground sardines and edamame green soybeans, miso paste, eggs and starch, are served in a clear soup made from broth of roasted and dried fish. The locals typically like to add chopped leeks right before eating the soup. The blended flavours of miso and leeks are very appetising, and the steaming hot fish balls will warm your body and soul. Sardines are commonly used, but boned Pacific sauries and atka mackerels also make great fish balls.
