Bamboo shoots called “shiho chiku” of autumn make the best match with kimchi

This is a product of “shiho chiku”, a rare bamboo shoot that can be harvested in autumn in Nankoku city, Kochi prefecture, processed with kimchi flavor. The crunchy texture makes the best match with kimchi flavor, and it goes very well with rice and with alcohol. As shiho chiku spoils rapidly, it was only able to eat them locally and thus was not know in other parts of Japan. However it was discovered that they can last for longer by boiling them with their skins on, and is now receiving attention from around the country.
