Yamagata’s specialty pickles made in Atsumi
Aka Kabu Zuke
Atsumi Machi, located in the west of Yamagata Prefecture, is known for its hot springs and the production of red turnips called Atsumi Kabu, which are commonly made into pickles. When marinated in vinegar, the white flesh of the turnip turns red, the colour of itself. Aka Kabu Zuke is a simple pickle made with salt and sugar only, which is often made at each home around November, when the turnips are harvested. The crunchy texture and pungent taste is the reason for popularity.
