"Sakana sushi" is a delicacy dish of sushi cooked with a fatty "kan saba (saba caught in winter).
Sakana zushi
"Sakana zushi" means saba zushi in Miyazaki Prefecture, and it is a local food from Kadogawa City. The reason to call saba zushi as "sakana zushi" is unknown. It is said that sakana zushi originate in "sugata zushi" from Kouchi Prefecture and people who moved from Shikoku area to Miyazaki brought it. It is a tradition in Kadogawa to have sakana zushi in festivals and celebrations, however, sakana zushi is eaten only in Miyazaki Prefecture and some area of Oita Prefecture in Kyushu. Sakana zushi has a good reputation as a delicacy made only with the best kansaba.
