An invention of predecessors to preserve fish and meat
Saikyozuke
“Saikyozuke” is a traditional food of Kyoto, where seasonal meat or fish fillet is pickled in Saikyo miso, a specialty of Kyoto. It is said that this was invented in order to enjoy fish in Kyoto, which is far from the sea. It often appears in Kyoto kaiseki (traditional Japanese course meal) and continues to entertain people of gourmet. It can be troublesome when cooking them at home as they easily get stuck on the grilling net, but using aluminum foils can solve the problem. Saikyo miso is a sweet miso of white-yellow color with a large quantity of rice malt mixed into, which is not very salty.
