The soup made from high quality small fish from Tomonoura and pork back fat is the key
The characteristics of “Onomichi ramen” are the rich but fresh soy sauce based soup and the springy flat noodles. High quality small fish from the currents of Tomonoura and pork back fat are used to make the soup stock. It is said to be a healthy food as small fish contain calcium and the back fat contain good cholesterol, which both ooze into the soup. Simple toppings are used such as spring onions, roast pork and Chinese bamboo shoots, but each shop has their own different ingredients as there are no rules to this ramen.
