Ine Buri Shabu
Ine cho, located at the Eastern tip of Tango Peninsula, has around 230 funaya (ship garage) along the shore of the bay for 5km long, and is famous of its rare beauty. The winter buri (yellowtail) caught in many places of Tango including Ine Bay is the specialty of this area. The fit and fatty buri taste especially delicious. “Buri shabu” is a local food of this area that has been eaten locally for more than 30 years. Boil the buri briefly in boiling kelp stock, and eat with ponzu (citron soy sauce) or sesame sauce when it is half cooked. The fat will be moderately removed and the fish will have a fresh flavor, with natural sweetness and the richness of the fat.
