Konoshiro Sushi

Kumihama Bay is a brackish lake in the Northwest end of Kyoto prefecture. In the North there is a sandbank called Shotenkyo that cuts off the sea, and the view is beautiful. “Konoshiro sushi” is one of the local home foods of this area, a sushi using the whole konoshiro fish caught in Kumihama Bay. Fatty Konoshiro fish of autumn to winter is sliced from its back and pickled in vinegar, and stuffed with tofu refuse instead of sushi rice. The fresh konoshiro flavor can be fully enjoyed with this sushi, a must try if you visit this area in winter.
