Shirakawa Ramen
Shirakawa Ramen is a bowl of ramen noodles with pleasantly chewy, curly noodles served in a rich, tasty soup seasoned with soy sauce. It has its roots back in the Taisho era (1912-1926), when the first ramen restaurant in Shirakawa City served hand-kneaded noodles in soy sauce-based soup. Its curly noodles and the recipe for the soup are said to greatly resemble today’s style of Shirakawa Ramen. The city now has over 100 restaurants that serve this ramen, and they all continue their efforts to improve the taste of the local specialty.
