Niboshi-dashi no Shoyu Ramen
It is common and popular in Aomori to use niboshi dried small sardine broth for ramen soup, thanks to the abundance of seafood from the ocean surrounding the prefecture. Lightly seasoned with soy sauce, the clear niboshi broth soup is delicate but rich in flavour and aroma, and goes well with the curly noodles. It is not greasy at all, so may be a perfect bowl that you would like to have after a few drinks.
