Snappers caught in Akashi, which are fat, firm and tasty, are one of the high-grade snappers in Japan. Taimeshi is the best of the specialty dishes using the snappers which are considered to bring good luck. It is cooked with grilled head and flesh put them on rice along with ginger and kobu, and cooked slowly. Using the head and bones with rice gives more flavor into the rice. You will surely enjoy the aroma of the rice and the flavor that fills in your mouth.
