Yezo deer processed for meat – a new specialty of Hokkaido
Deer Meat Yukhoe
Yezo deers, a species native to Hokkaido, have caused increasing damage to agriculture and forestry in the eastern part of Hokkaido, posing serious problems on the island. In an attempt to utilise this natural resource, Yezo deers culled by professional hunters are processed into meat to be served at restaurants across Hokkaido. Deer meat is commonly used in French cuisine, but the surprising tasty Deer Meat Yukhoe, a dish of fresh raw deer meat seasoned with spices and sauces, is gaining fans as a new specialty of Hokkaido.
