Okonomiyaki Hiroshima style
Plenty of cabbage, bean sprouts and pork are layered on top of a thin pancake on a hot plate, and then turned over. It is eaten together with fried noodles and thinly made omelet that are cooked separately. Sweet thick sauce is used commonly, and mayonnaise is used as preferred. It is often compared with Kansai style okonomiyaki, but the origins are different. Nowadays it can be seen in many parts of Japan in restaurants or festival stalls, but locally it is loved as a dish to finalize a drinking night.
