Rakkyo Zuke

Rakkyo Zuke is a famous pickle of Nikko City, which is known for the Shinto shrine of Nikko Tosho-gu. It is made by pickling Chinese scallions in tamati, a liquid by-product that forms in the process of making soy sauce and miso paste, until they are light brown, fully taking in the flavour of tamari as they ferment and mature in it. In addition to the popular sweet and sour Rakkyo Zuke, sometime they are flavoured with honey, red wine or purple-red shiso herb. Enjoy the crisp texture and flavourful taste of the scallions.
