Bamboo Shoot Dishes
The freshness is the most important thing of Kyoto bamboo shoots. Digging them in the morning and eating them fresh as sashimi will bring a slight sweet taste to your mouth. The texture of bamboo shoots can be enjoyed as baked, steamed, simmered or with rice. They go perfectly well with miso and Japanese pepper, and the representative dish is “kinomi ae”. It is great as soup also, and Nagaokakyo city, a major producing area of bamboo shoots in Kyoto, even has restaurants with full course menus of bamboo shoots.
