“Fried liver” is people's favorite in Tsukuda and Tsukishima. It is good for one of the dishes or a snack. In Tsukishima, for it is as popular as Monajayaki, there are some restaurants specialized in fried liver. Fresh liver is first sliced into thin pieces, coated in beaten egg, flour and bread crumbs, and finally lightly fried in rapeseed oil. Special worcester sauce of each restaurant is served with it. Not much of liver smell, rather sweetness is there. It is tasty when it is freshly fried, but also when it is cool down.
