Ozu Croquette
Ozu croquette is a new local specialty where crispy and fragrant croquette and ‘imotaki’, a traditional cuisine of Ozu are amazingly merged. It is a menu made by local restaurants in Ozu city with the purpose of revitalizing the area. ‘Imotaki’ is a dish which yam, a specialty of Ozu, deep-fried tofu, konnyaku, chicken is boiled together with dashi made from ayu (sweetfish). Today it is served in six restaurants in the city. The rule is to use yam from the area, and each shop has its original ingredients and tastes.
