Nikujaga of Kure
Nikujaga is a dish with potatoes, beef, konnyaku and onion, simmered with soy sauce and sugar. The nikujaga of Kure uses May Queen for its potatoes, and is cooked without carrots or peas. It is said that the origin dates back to when the cook of General Heihachiro Togo was ordered to make “beef stew”, and tried his best to cook something he had never seen before. As a result this sweetly simmered nikujaga was made, and the recipe was in the “Navy kitchen textbook”. The nikujaga of Kure is based on this recipe.
