Sweet and savoury egg custard, an essential dish for new year celebration in Hokkaido
Donburi ni Haitta Chawan-mushi
Chawan-mushi egg custard is one of the must-have dishes to celebrate the new year in Hokkaido. What makes it unique is that the Hokkaido-style egg custard has candied chestnuts in it, and that it is sweet in flavour, while chawan-mushi in other prefectures is non-sweet, steamed in a light soy-flavoured broth. Other ingredients are similar to those in other prefectures. The people of Hokkaido celebrate the arrival of the new year with their special chawan-mushi served in a large bowl.
